Jenis pengeringan ada dua cara yaitu pengeringan di bawah sinar matahari dan pengeringan dengan alat tray dryer. Tujuan penelitian ini untuk mengetahui pengaruh variasi waktu dan variasi massa pengeringan terhadap <em>moisture content </em>dan <em>drying rate</em>. Penelitian ini menggunakan metode tray dryer dengan sampel porang berbentuk stik. Sampel porang menggunakan variasi massa 50, 75, 100 gram dan variasi waktu 2, 3, 4 jam dengan suhu pengeringan 50⁰C. Hasil penelitian menunjukkan <em>moisture content </em>terbaik pada massa 50 gram dan waktu 4 jam dengan rerata 2-6%.
